3.10 describe the manufacture of ethanol by the fermentation of sugars, for example glucose, at a temperature of about 30°C
Fermentation can
be used to make ethanol from crops containing sugars, e.g., sugar cane. This method has been used to make alcoholic
drinks for thousands of years, but it is also used to manufacture ethanol for
industrial use too. The equation below
shows the fermentation of glucose.
C6H12O6(aq) → 2C2H5OH(aq) + 2CO2(g)
The temperature is warm to increase the rate of reaction, but not too warm,
as the enzymes in the yeast would denature. Learn the equation and the conditions needed
for the reaction.
